How is KAPECÉ Black Pepper produced and what makes it so special?
KAPECÉ pepper, like all types of pepper (Piper nigrum), comes from the same vine.
The harvest takes place before full ripeness, when the green berries begin to turn yellow. As soon as the peppercorns start to yellow, the clusters are harvested, soaked, and heaped together in the shade for a few days. The stalks are then removed, and the pepper is left to dry. As it dries, the berries turn black and the outer layer wrinkles.
What makes KAPECÉ pepper so aromatic is its natural cultivation method, without chemical fertilizers, as well as the unique soil quality of the Tiassalé region. Slowly sun-dried, the green pepper berries transform into black, slightly wrinkled peppercorns.
What does Tiassalé Black Pepper taste like?
KAPECÉ black pepper is highly aromatic, with a rich and spicy flavor.
KAPECÉ White Pepper
White pepper is harvested at full maturity. When ripe, the outer layer of the peppercorn turns red and juicy. The clusters are sorted to keep only the red berries. After sorting, the grains are bagged and immersed in the waters of the Bandama River for several days.During this process, the dark red outer layer softens, ferments, and detaches from the grain. The process is then stopped, and the grains are washed to remove all traces of the outer layer before being sun-dried.
This traditional method used for KAPECÉ pepper results in a much richer and more aromatic white pepper compared to “standard” white pepper obtained through mechanical processing of black or green pepper.
